I know I’ve seen these floating around Tumblr, but even before that, Rachel sent the link to me and I immediately decided to make them for a book club brunch I’m hosting this weekend.
Though I love eggs more than I can describe, sometimes I feel like I’ve seen it all. This was a new preparation for me, and I’m excited to try it out.
Baked Egg Boats Makes 4 Ingredients: 4 demi sourdough baguettes 5 eggs 1/3 cup heavy cream 4 ounces pancetta, finely chopped and fried until crisp 3 ounces gruyere cheese, grated 2 green onions, thinly sliced salt and pepper to taste Directions: 1. Preheat oven to 350 degrees F. 2. Cut a deep “V” through the tops of each baguette until about a 1/2 inch to the bottom. Partially unstuff the baguettes. Set aside. 3. Place the eggs and cream into a mixing bowl and lightly beat together. Whisk in the remaining ingredients and lightly season with salt and pepper. 4. Divide and pour the mixture into each baguette boat and place onto a baking sheet. 5. Bake for 20 to 25 minutes or until golden brown, puffed and set in the center. Season with salt and pepper. 6. Allow to cool for about 5 minutes, cut and serve.
Blogging has been light lately because my lovely designer Jona and I have been working on some big blog changes behind-the-scenes. Get ready for some fun announcements next week!

Stronger than you need to be

It’s about being stronger than you need to be. It’s why I run. Why I exercise. Why I wake up early enough to lace up my sneakers, put on my gloves, and log miles.

Amid the noise, stress, and pressure, it’s about being stronger than all of it — stronger than you need to be.

Fight fatigue, fight stress.

In all my courses, I really have to teach the basic messages of my life … that the rewards, the satisfactions, are not in being partner or making a million dollars, but in recognizing evils, recognizing injustices and standing up and speaking out about them even in absolutely losing situations where you know it’s not going to bring about any change — that there are intangible rewards to the spirit that make that worthwhile. Civil rights advocate and legal scholar Derrick Bell on Fresh Air in 1992. He was the first tenured black professor at Harvard Law School and his 1973 book about race and American law remains a staple at American law schools. Bell died last week from carcinoid cancer.  (via nprfreshair)

Hobby?

If I had a larger disposable income I would:

1. Continue ballroom dance classes.

2. Practice hot yoga.

So much of my time is spent crossing things off of my to-do list and I really get antsy sitting reading all day. Activities that get me moving sound perfect.

What is a hobby you would try if you had all the time and money in the world?

The chief Raoni cries when he learns that brazilian president Dilma released the beginning of construction of the hydroelectric plant of Belo Monte, even after tens of thousands of letters and emails addressed to her and which were ignored as the more than 600,000 signatures. That is, the death sentence of the peoples of Great Bend of the Xingu river is enacted. Belo Monte will inundate at least 400,000 hectares of forest, an area bigger than the Panama Canal, thus expelling 40,000 indigenous and local populations and destroying habitat valuable for many species - all to produce electricity at a high social, economic and environmental cost, which could easily be generated with greater investments in energy efficiency.
It was brought to my attention that there is a petition we all can sign to help support these indigenous people and the Amazon. Please take a second to check it out below or comparable petitions that are available. Thank you.

12 seconds is how long it took me to sign this petition. I hope you can spare that much and do the same.

this is so sad.
